The aim of this article is to present the environmental benefits of one of the most popular materials worldwide. Its physical and thermal properties, degradation phenomena and preservation treatments are shown. However, facing these important environmental qualities we must be cautious due to excessive felling that points out Mexico as one of the most carefree world countries in this regard, and it forces us to consider other alternatives such as bamboo. The reference texts are mainly Italian -allowing us to have a European viewpoint- and there are others by Mexican restaurateurs who have had a long experience working with wood. La madera es uno de los materiales con mejores cualidades térmicas; sin embargo, en nuestros países latinoamericanos escasea por el mal manejo que se ha hecho de este recurso. El objetivo de este artículo es exponer las ventajas ambientales de uno de los materiales más populares a nivel mundial. Se muestran sus propiedades físicas y térmicas, fenómenos de degradación y tratamientos de preservación. No obstante, ante estas importantes cualidades ambientales debemos ser cautos debido a la tala inmoderada que señala a México como uno de los países más despreocupados del mundo en este sentido, y nos obliga a contemplar otras alternativas como, por ejemplo, el bambú. Los textos de referencia son principalmente italianos -lo que nos permite tener el punto de vista europeo- y otros de restauradores mexicanos que han tenido una larga experiencia en el trabajo con la madera.
